So here's the thing: This is amazing.
Don't buy pesto, make it yourself! It takes 2 minutes, tastes better, has zero crap and it's really fresh, not out of a jar. Here's how I make it:
Ingredients + Instructions:
- 2 Cups of Basil Leaves
- 1/4 Cup of Pine Nuts
- 1-2 Cloves of Crushed Garlic
- Olive Oil
- Salt + Pepper
- Lemon Juice (optional)
- Place the basil, pine nuts and garlic into a blender and blitz
- Slowly pour in the oil until it reaches your desired consistency
- Add lemon juice at this stage if you want it, again the amount depends on your taste
- Some people add nutritional yeast to give it a cheesy taste that most pesto has. I don't, but it's an option
- Season with salt + pepper and enjoy
- Keep it in the fridge or boil up some brown rice pasta and smother it
