Very Vegan Pesto

So here's the thing: This is amazing. 

Don't buy pesto, make it yourself!  It takes 2 minutes, tastes better, has zero crap and it's really fresh, not out of a jar. Here's how I make it:

Ingredients + Instructions:

  • 2 Cups of Basil Leaves
  • 1/4 Cup of Pine Nuts
  • 1-2 Cloves of Crushed Garlic
  • Olive Oil
  • Salt + Pepper
  • Lemon Juice (optional)
  1. Place the basil, pine nuts and garlic into a blender and blitz
  2. Slowly pour in the oil until it reaches your desired consistency
  3. Add lemon juice at this stage if you want it, again the amount depends on your taste
  4. Some people add nutritional yeast to give it a cheesy taste that most pesto has. I don't, but it's an option
  5. Season with salt + pepper and enjoy
  6. Keep it in the fridge or boil up some brown rice pasta and smother it
